The word pizza was first documented during IX century in Greece, successively in different parts of Italy. Foods similar to pizza have been made since the Neolithic age. The precursor of pizza was the focaccia.
The pizza as we know it today came later after the tomato was brought to Europe from the Americas in the 16th century. The dish gained popularity, and soon pizza became a tourist attraction as visitors to Naples ventured into the poorer areas of the city to try the local specialty.
Same as the traditional Italian craftsmen, we have invented our own recipes for the pizza crust in two main varieties - whole wheat crust and gluten-free with rice flour.
Pizza ingredients and toppings are all plant based. We add alternatives to meat products to recreate traditional varieties like Margherita, Peperoni and capricciosa. A cashew sauce is used as an alternative to the traditional mozzarella or yellow cheese which reassembles similar look and taste.
